Pumpkin seed oil mainly contains 10 kinds of fatty acids, and the content of unsaturated fatty acids accounts for 90%. Among them, the content of oleic acid is as high as 63.0%, followed by linoleic acid content of 20.2%, linolenic acid content of 6.8%, palmitic acid content of 4.09%, stearic acid content of 1.78%, behenic acid content of 1.16%, and the content of other four fatty acids is very low, accounting for about 1.05% in total. The process of producing pumpkin seed oil by cold pressing is that the oil crops are not subjected to high-temperature treatment such as steaming and frying before being pressed, and the temperature is controlled below 80 degrees Celsius. In general, the hot-pressing method has a higher oil yield, but the oil is darker in color and will destroy the nutritional content of the oil. The cold pressing method can retain nutrients to a greater extent, but the oil yield is not high. It is recommended to choose different pressing methods according to different market demands.
