Moringa oil is a mild, pale yellow non-drying oil with a characteristic nutty flavor. The oil content in Moringa seeds is approximately 40% by weight. Many studies have been conducted on the fatty acid composition of Moringa oil in recent years, and although there are variations in fatty acid detection data due to differences in analytical techniques and sample sources, overall, oleic acid content in Moringa oil can range from 62% to 78%. When all unsaturated fatty acids are combined, the total unsaturated fatty acid content is much higher than 80%. This indicates that Moringa oil has a high content of unsaturated fatty acids. Additionally, the content of docosanoic acid, also known as behenic acid, which has an impact on the naming of Moringa oil, is relatively high at around 4% to 8%.

 

Due to its similarity in fatty acid composition to olive oil, especially in terms of oleic acid content. Moringa oil can be compared to olive oil and camellia oil when used as an edible oil. It is regarded as one of the three high-end and healthy edible oils along with olive oil and camellia oil. If there is any superior characteristic of Moringa oil compared to the other two, it is its higher saturation level, as well as its ability to withstand high-temperature frying and resist spoilage. Of course, Moringa oil is also significantly more expensive than the other two oils.
