The traditional extraction methods of sesame oil mainly include high temperature pressing, water substitution and solvent extraction. The small mill sesame oil obtained by water substitution method is a kind of high-grade seasoning oil with rich flavor. However, the disadvantages of water substitution method are: high labor intensity, low oil yield, and serious protein denaturation. Solvent leaching method has many problems, such as more equipment, large investment, high cost, excessive solvent residue and so on. In the ordinary pressing method, sesame is fried at high temperature, which causes serious denaturation of protein, destruction of heat unstable components and loss of volatile matter, and is easy to cause the carcinogen benzopyrene to seriously exceed the standard. Therefore, it is better to squeeze sesame oil at low temperature without high temperature frying.

2. Factors affecting the extraction rate of sesame oil:

Sesame water content, sesame particle size, and pressing temperature have a great impact on the extraction rate of sesame oil.

It can be seen from the above figure that the oil extraction rate increases with the increase of temperature, and the growth trend slows down when the temperature exceeds 50 ℃. Considering the long-term heat denaturation of sesame protein after the temperature exceeds 60 ℃, it is preliminarily determined that the pressing temperature is 50 ℃. It is generally believed that sesame oil has better health care function and oxidation resistance than other oils, mainly because sesame contains lignans and tocopherols. Antioxidants in sesame can effectively remove free radicals in cells, prevent the production of lipid peroxide in the body, delay cell aging, and thus reflect antioxidant activity. The research shows that sesame oil obtained by different processes is rich in antioxidant components sesamin (1.90~3.50mg/g), sesamol (0.098~0.028g/kg), ve (0.423~0465g/kg), and there is no significant difference in the content. The induction time of sesame oil obtained by low-temperature pressing is the longest and the oxidation stability is the best. The induction time is up to 27.36h, which is significantly better than other sesame oil. However, the contents of sesamin, sesamol and VE of sesame oil obtained by low-temperature pressing are not higher than those of sesame oil obtained by other oil production methods, indicating that the oil production process conditions play a vital role in the oxidation stability of sesame oil.

Characteristics of low temperature pressed sesame oil:

1. The whole process of low-temperature pressing sesame oil adopts low temperature. The denaturation degree of sesame protein is low and the color change is small. It is convenient to produce high-activity and high-quality sesame protein and improves the added value of sesame deep processing.

2. The flavor of low-temperature pressed sesame oil is slightly inferior to other sesame oil, and other quality indicators are better than other sesame oil, reaching the national first-class oil standard. There is no benzopyrene in the production process without high-temperature frying. The oil is light yellow in color, which is closer to the appearance quality of foreign sesame oil.

3. Through single factor and orthogonal test, the main factors affecting the extraction rate of low-temperature pressed sesame oil are: pressing pressure, pressing time, material particle size, pressing temperature. The optimum conditions of low temperature pressing sesame oil are: particle size 20 mesh, pressing temperature 50 ℃, pressing time 60min, pressure 40MPa. Under these conditions, the extraction rate of sesame oil was 43.46%.
