Natural fats and oils are a mixture of many kinds of triglycerides (glycerides for short). The melting point of different types of triglycerides in natural oils and fats has certain differences, and as the temperature decreases the mutual solubility of solid fat and liquid oil decreases, therefore, by cooling the fats and oils can promote the crystallization of solid fat products, and then solid-liquid separation can achieve the purpose of degreasing. According to the crystallization characteristics of fats and oils, the physical process of separation by controlling the crystallization of natural fats and oils into different properties of glycerol triglycerides is called fats and oils separation process.
Through oil and grease separation, the complex composition of natural oils and fats can be graded to improve the adaptability of oils and fats to different use requirements, expand the use of oils and fats, and improve the use value and economic value of oils and fats.
