Why is it recommended to press palm fruit within 24 hours of harvesting?

Different from common oilseeds, palm fruit pulp is high in moisture and sugar. After harvesting, internal biochemical reactions remain active. Lipase is quickly activated to decompose natural oil, accelerate triglyceride hydrolysis and raise free fatty acids.

Free fatty acid directly determines oil acid value. If processing is delayed over 24 hours, crude oil turns sour, dark and turbid. More caustic soda and bleaching clay are required for refining, raising production costs and downgrading commercial oil grade.

In tropical hot and humid conditions, delayed palm fruit is prone to bacteria and mold growth, causing fermentation, pulp deterioration and unpleasant odors. Harmful metabolites may penetrate the oil, bringing hidden food safety risks that cannot be fully eliminated by refining.info-821-550

 

Delayed pressing also reduces oil yield. Spoilage destroys pulp fiber structure, leading to oil loss and volatilization. Microorganisms consume oil nutrients, resulting in lower output and economic losses for farmers and factories.

Overstocked palm fruit bunches tend to stick and soften, easily causing equipment blockage and wear during sterilization and threshing. It also increases manual cleaning costs and disrupts standardized production.

The 24-hour period is the best time window to lock palm oil's aroma, color and quality. Timely processing maintains golden color and pure flavor, controls free fatty acids within premium standards, stabilizes oil yield and reduces waste. For this reason, modern palm oil production lines advocate local fruit sourcing and same-day processing to finish pressing within 24 hours.
