Olive oil press process line
The nutritional content of olive oil
Olive oil contains 65.8%~84.9% monounsaturated fatty acids. In addition to supplying a large amount of heat energy to the human body, it can also adjust the ratio of high and low-density lipoprotein cholesterol in human plasma. After eating olive oil, it can increase the balanced concentration of high-density lipoprotein (HDL) in the human body to ensure the body's requirements for cholesterol. , but also reduce the concentration of low-density lipoprotein (LDL) in plasma to prevent cholesterol in the body from
Olive oil contains 3.5%~22% polyunsaturated fatty acids, polyunsaturated fatty acids can be divided into omega-3 fatty acids (mainly linolenic acid) and omega-6 fatty acids (mainly linoleic acid). These are fatty acids that are necessary for the human body and cannot be synthesized by the human body, so they are also called essential fatty acids. According to decades of research on essential fatty acids in the human body by the medical community in the world, it has been proved that when the ratio of essential fatty acids in the human body is 1:4, various diseases are difficult to invade the human body. The ratio of essential fatty acids contained in olive oil is just 1:4, which is similar to human milk.
Olive oil is rich in trace elements squalene, flavonoids and polyphenols, which can enhance the body's immunity and delay aging.
It also contains 0.03~0.36mg/100g of β-carotene, 1.2~43mg/100g of vitamin E, and various fat-soluble vitamins such as vitamin A, vitamin D, and vitamin K, which are essential nutrients for human organs. Therefore, today's medical circles recognize olive oil as one of the most healthy edible oils. Western countries such as the United States and Germany have already included olive oil in the Pharmacopoeia.

Pressing Process
(1) Transportation and storage
The collected fresh fruits should be placed in small baskets, and then the baskets should be stacked, transported to the processing plant, and spread flat in a ventilated storage room to avoid overpressure, overheating and bruising of the fresh fruits, otherwise they are easy to oxidize and ferment. However, in the actual transportation, the fruits are stacked in big bags, so the stacking time should not exceed 1 to 2 days.
(2) Remove branches and leaves
Belt conveying and winnowing are adopted, and the branches and leaves are separated from the fruit by the fan. It is required that there are no leaves in the fruit, because the leaves contain more chlorophyll. During the crushing and fusion process, due to the high temperature, the chlorophyll is easily oxidized and affects the quality of the oil. Therefore, the power of the fan is relatively large.
(3) Cleaning
The purpose of cleaning is to remove dust and remove a small amount of leaves. Cleaning requires a certain amount of water, which will generate waste water. In order to reduce the amount of waste water, circulating water is used for cleaning. The control amount is 2 tons of water for cleaning 5 tons of fruit.
(4) Grinding
Using a hammer crusher for crushing, the size of the sieve hole and the beating speed are the key. The best sieve hole diameter is 6mm, the best beating speed is 2500~3000r/min, the acidity of the oil, the UV value of the peroxide, the total Phenols and sterols have good results.
(5) Fusion
The crushed fruit pulp is transferred to the fusion tank, and mixed uniformly by the movement of the screw rod, which is conducive to heat dissipation on the one hand, and the formation of oil droplets on the other hand to avoid emulsification. Controlling the temperature and mixing time is the key, the optimal time is 30 minutes, the temperature is less than 40°C, and the cooling method of passing water through the interlayer is adopted.
(6) Centrifugal decantation
At present, most of them use three-phase centrifugation, and a few use two-phase centrifugation. Three-phase centrifugation needs to add 40%~50% water, of which pomace accounts for about 45%, its residual oil rate is 4%~6%, and oil yield is about 25%. Two-phase centrifugation does not need to add water, and pomace accounts for About 75%, its water content is 60%~65%, and its oil yield is about 25%. The centrifuge speed is 3000r/min.
(7) Storage
The centrifuged oil is stored in a large stainless steel storage tank to avoid light and heat, and it can be filled with nitrogen for protection if necessary.
placed in pass
(8) Bottling
The oil in the storage tank releases a small amount of water and oil feet regularly. If it is still not clear, it can be filtered through a plate frame with diatomaceous earth, and then divided into small bottles.
