Factors affecting the aroma of peanut oil

The unique rich fragrance of pressed peanut oil benefits from its unique production process. To produce fragrance, you must first select good ingredients, and secondly, it must be roasted at a proper high temperature to obtain the fragrance, and you must also want to retain the fragrance and extend the fragrance. The main influencing factors of storage time are:

1. Raw materials

The production of pressed peanut oil must use fresh, plump peanut kernels, because the oleic acid value of immature, moldy, damaged and aged kernels is high, the color is dark, and the flavor is poor and it is easy to bring aflatoxin. Therefore, it is necessary to purchase fresh, full and dry oil when purchasing raw materials, and clean the raw materials during processing.

2. Moisture

Moisture has a direct effect on the smooth completion of the entire roasting process. Whether the peanut kernels are cooked, squeezed moisture, and the temperature can be adjusted to the right degree, reasonable moisture is needed. Only in this way can there be good quality oil.

3. Baking temperature

The appropriate baking temperature is the condition for obtaining a strong fragrance. If the temperature is low, the fragrance will be weak. If the temperature is too high, the material will be easy to gelatinize, and the flavor will be bad if it is not good.

4. Refining process

There is a fragrance in crude oil. You must find a way to retain it during the refining process. The fragrance is an easily volatile substance. The simpler the refining process, the better. Generally, filtration is sufficient to filter the impurities in the crude oil and retain the fragrance of the peanut oil.

5. Storage process

In the oil storage process, if possible, stainless steel oil storage tanks and low-temperature storage can be used to store fragrance.
